If you're like me and can't beat the chill you get inside on a cold, damp day like today - then give this super easy carrot soup a try. It'll warm you up and fill you up - plus the kids will love it...what's not to like about a recipe like that? Enjoy!

Ingredients:
1/4 cup butter
1 medium onion, sliced
1 small clove of garlic, minced
5 cups water
2 1/2 cups sliced carrots
1/4 cup long grain rice
2 tbsp chicken bouillon
1/2 tsp curry powder
salt and chopped parsley
To Prepare:
Melt butter in large saucepan. Saute onion and garlic until tender. Add water, carrots, rice, bouillon and curry. Bring to a boil. Cover and simmer 20-25 mins. Spoon into blender and blend until smooth. Add salt and parsley to taste. Serves 4.
